It is derived from the bark of the Cinnamomum cassia tree, which is harvested by carefully removing the outer layer to expose the inner bark. This inner bark is dried, resulting in the curled quills often used in cooking and baking. With its rich and warm flavor, cassia is a favored ingredient in various global cuisines.
